Manimpasta: the secrets of the panzerotto

Water, flour, yeast, extra virgin olive oil and a pinch of salt give life to one of the most envied masterpieces in the world: the panzerotto.

Born in the alleyways of the old city of Bari, at the same time as the tomato growing in popularity, his majesty “the panzerotto” represents not only pride and delight of its quick, simple production, but it glorifies and gives great values to the tastes of typical ingredients.

This simple mixture filled with the most varied flavours is otherwise known as the moment of conviviality and reunions between countrymen and women (ccummnedde in dialect), just before the main festivities. The panzerottata, in fact, gathers them all together, regardless of what each one tastes of. The product of humble cooking, it is made with leftover bread dough, to which flour, oil and water is added. The traditional recipe fried them in the extra virgin olive oil, but today they are made using the area’s select ingredients, local blends of flour with Senatori Cappelli grain, slow rising, fresh mozzarella produced in situ, and stuffing with local produce cooked at a controlled temperature.

From the leavened block, once kneaded, the classic “pizza” ingredients of mozzarella and tomato are added and closed into a half-moon shape with forks or with your knuckles, creating a complete dish.

Anna, Lorenzo and their son Nico await you a few blocks away from the centre of Ostuni where you will be guided through all the phases of making this wonderful dish, from preparing the food, to cooking it, to finally tasting the panzarotti and fried puccette.

What you'll need: Comfortable clothing that will allow you to move freely. Prepare yourselves to get covered in small and smell the crispiness of the panzerotto. We advise people with long hair to bring a bobble to tie up their hair with.
